This is a great easy to follow and visually appealing video (c’mon, it’s less than 10 minutes long) about food, obesity, and how to bridge gaps between demand (urban areas) and supply (farm areas) by way of infrastructure improvements.
Michael Conard (speaker and part of Columbia’s Earth Institute) is really great at explaining the importance of eating locally and supporting local agriculture, alternatives to traditional farming, and the negative aspects of our typical way of acquiring food. In his talk, he focuses on the NY area, but these issues and concepts are applicable to any area in the US.
